Massallah pertaining to ones will and inheritance

Assalaamu Alaikum Mufti,
I have a son, daughter, wife and 2 stepdaughters. My parents, brothers and sister are also alive.
1) Do I stipulate all of the above in my will/ do all of the above inherit from me.
2) How what portion do each get?
